We all know that the kid version is quick, easy, maybe not exactly the BEST decision for a daily meal... this is a version you AND your kids can enjoy knowing it's a better choice!
These takes a little more work that their microwaveable counterparts, OBVIOUSLY, but they are delicious every time and are a slightly healthier take on the classic!
We pair with caesar salad most Monday nights and use a little extra caesar dressing for dipping! Enjoy!
Adult Chicken Nuggets
Preheat oven to 425 degrees
Ingredients:
Chicken breast or tenderloins (2-3 breasts, 6-9 tenderloins)
Panko Breadcrumbs
Italian Style breadcrumbs
Parmesan Cheese
Extra Virgin Olive Oil
2 TBS caesar dressing
1 egg
1. Put equal amounts (1/3 a cup probably) of both breadcrumbs and parmesan cheese in a bowl, mix together.
2. Mix egg, big fat drizzle (2 TBS?) EVOO, and caesar in a separate bowl.
3. Slice your chicken breasts (or use tenderloins as is) into strips.
4. Dredge chicken in egg mixture, and then coat in breadcrumb and cheese mixture. Place on tin foil lined baking sheet (Hi, no clean up!) Bake for 20-30 minutes until golden and crispy like YOU like your chicken nuggets!
5. Serve to your adults selves with salad, and to your kiddos with their favorite veggies! (maybe green beans with a little parmesan on top?!)
That's it! We have some variation of this meal every Monday night in our house... why?!

Breaded chicken feels comfier than regular old baked chicken, but is less cozy than having to pile dinner bread onto our plates! So it's a light way to start the week on a healthy foot!
Having a couple meals a week that you don't have to think about will help you feel more inclined to put a little more work in on the OTHER nights... all adding up to healthier, happier, better decisions overall!
